I found this dessert recipe in the spring issue of The Cottage Journal and when I saw how simple it was I just knew I had to try it. Actually this recipe calls for ingredients most of us all ready have in the kitchen. Traditional French Clafoutis is made with black cherries, but really any fresh fruit can be used.
All you need is...
3/4 cup milk
1/4 cup sugar
1/2 tsp. vanilla extract
a pinch of salt
1/3 cup of flour
1 1/2 cups fresh fruit (I used raspberries and blueberries)
Prepare 4 small oven proof bowls like ramekins or creme brulee dishes, by coating them with cooking spray.
In a large bowl whisk together the eggs, sugar, salt and vanilla. Gradually add the flour and whisk until the batter is completely smooth with no lumps. (I actually ended up putting my batter in the blender) Place your fruit in the ramekins and then pour the batter over it. Bake in oven preheated to 350 degrees for 30 minutes or until tops are light brown in color.
Serve warm or at room temperature.
